Most restaurants that appear fully booked are not fully booked. They have cancellations, bar seats, and early slots that never make it onto the booking page. The question is whether you know how to find them.

Eat Early

The most reliable move. In Southern Europe, showing up at 6:30pm for a restaurant that opens at 7pm gets you a table most nights of the week. The place isn't busy yet, the kitchen is ready, and the staff have no reason to turn you away. You're not getting the full atmosphere of a dinner service in full swing, but you're eating in the restaurant you wanted to eat in, which is the actual goal.

In Northern Europe, the same principle applies but the window is narrower. 6pm or immediately at opening tends to work. By 7:30pm, the early tables are turning and the no-reservation opportunities close.

Ask for the Bar

A lot of restaurants with no available tables have bar seats that are either not bookable or not visible on the booking platform. Walk in, ask directly: "do you have any room at the bar tonight?" The answer is yes more often than you'd expect. Bar seats are frequently not managed the same way table reservations are, and sitting at the bar at a good restaurant is often a better experience anyway.

Call, Don't Use the App

Booking platforms show what's bookable online. They don't show what's actually available. Call the restaurant at 9am on the day you want to go and ask about cancellations. Restaurants get cancellations constantly and they're often not reloaded onto booking systems. A phone call is also harder to say no to than an online form, which is why it works.

Try Lunch

Dinner at a sought-after restaurant is almost always harder to get into than lunch. The kitchen, the chef, and often the menu are the same. Lunch service is quieter and booking pressure is lower. If the restaurant you want to visit offers lunch, book it or walk in at noon and you'll get a better table for less money and without the wait.

Go Alone or in a Pair

Restaurants can fill a gap with one or two people far more easily than with four or six. Solo travellers and pairs are the easiest walk-ins to accommodate. If you're in a larger group, your options narrow considerably and planning ahead becomes unavoidable.

The Honest Ask at Slow Moments

If you've tried everything and the restaurant is still showing as full, go in person around 4pm, explain you're only in the city for one night, and ask if there's anything possible. It's not guaranteed, but a direct, low-pressure ask at a quiet moment sometimes produces a table that wouldn't exist through any other channel.

Fully booked is a default status. It's not always the final answer.
